My new love….

Posted by mandyhuckins on March 4, 2010

Avocado.  Well, this isn’t exactly new….I have been loving them for about a year now.  I can’t believe there was ever a time that I didn’t want to eat them!  My favorite way to consume them is sliced and drizzled with good olive oil and then sprinkled with sea salt and McCormick’s Montreal Steak pepper grinder.  Wow!

That is like heaven on a plate!

Today I made a delicious sandwich for lunch.  I cut a pita in half and then opened it.  I slathered some Hummus in the pocket and then stuffed it with thinly sliced cucumbers and red onions, some of these avocado slices and arugula.  Mmmmmmmm!

Bonus – how green and pretty this is – I will have to make it again on St. Patty’s Day.

Note: I just realized how health conscious this post sounds – please know that is not true.  Just yesterday I polished off a half a bag of Doritos while I was lounging in bed all afternoon because I didn’t feel well.  For dinner, I had my husband bring home a sourdough Philly cheese(less)steak sandwich and fries for dinner.  AND I ate a pinwheel cookie for dessert.

Freshly baked bread…

Posted by mandyhuckins on May 22, 2009

There is nothing better.  Last weekend, I purchased my first bread machine at a yard sale for $15.  I read all of the instructions and was a little nervous because the booklet stressed over and over again how important exact measuring is to creating a perfect loaf.  This is why I don’t bake…for some reason, I am not good at measuring.  I like to eye-ball it and throw things in.  Well, I am happy to report that I successfully created this lovely loaf of french bread:

It was crusty on the oustide and soft on the inside:

It was delicious!  But, even better was the wonderful smell of bread baking that permeated my house all morning.

I had better keep using it – because so far, that loaf of bread cost about $20!

Going to the dogs…

Posted by mandyhuckins on April 23, 2009

It is official, we are crazy dog people.  (Of course, in our defense, Copper is hardly your average dog.)  But, on a recent shopping trip to publix, my husband discovered Dogsters – Ice Cream Style Treats for Dogs in Peanut Butter and Cheese Flavor.

Before he gave it to her, I caught him giving it a taste… (he said it tasted like cardboard)

Copper wondered why dad was eating her treat….

Don’t worry, she got her turn.  And, boy was it a hit!  She licked without stopping until it was all gone.

Oh the disappointment…

Posted by mandyhuckins on April 21, 2009

Just imagine my horror when I pulled into my favorite fried food haven – Zaxby’s – with my mind on some fingerz and krinkle fries with a little splurge of fried dill pickles on the side only to notice that they no longer have the fried dill pickles on the menu!  What?!?  It seems like just yesterday (but, was probably a few months ago) that I first noticed them and they were advertised as “new.”  How fleeting the love affair was…

If you live in an area that doesn’t have a Zaxby’s, I am SO sorry.
